2 cups basmati rice
2 teaspoons cilantro, finely chopped
2 ¼ teaspoons salt, divided
2 tablespoons fresh lime juice
Bring to boil 8 cups water in a large cooking pot.
Add salt; stir.
Add rice; return to boil, boil uncovered 12 minutes.
Drain rice; rinse with hot water.
Pour rice into serving bowl; while rice is still warm, stir in cilantro and lime juice; fluff with a fork.
Use 4 cups of water to one cup of rice, do not cover to cook.
Rinse rice in hot water after draining it.
